Crackerwiches Preparation Time: 05 minutes | Serves-04 Ingredients and Quantity: Multigrain Crackers- 08 nos. Peanut butter- 02 tsp. Berries of your choice- 04 nos. sliced Banana sliced -01 no. Almond, lightly toasted and slivered- 04 tsp. Cinnamon powder- 1/4th tsp. Organic Honey- 01 tbsp. Method: Place the crackers on a flat base. Apply peanut butter. Place the slices of banana and berries. Sprinkle slivered almonds and cinnamon powder. Drizzle honey on top. Top it with another cracker. Repeat this process to prepare 04 crackerwiches. By: Chef Reetu Uday Kugaji Dark Chocolate, Coconut and Berries (Of Your Choice) Pudding (Eggless and No-Bake) Indulge in this rich, delicious and relatively healthy dark chocolate pudding with the goodness of Coconut Milk, Coconut Cream and berries of your choice: Cherries, blueberries, strawberries etc. Preparation Time: 10 minutes | Cooking Time: 02 minutes | Refrigeration Time: 02 Hours (Serves: 04) Ingredients and Quantity: Coconut milk (cold) - 01 cup. Corn-starch/Cornflour - 01 tbsp. Coconut Cream -90 ml Dark Chocolate, melted- 1/4th cup Dark Chocolate, chopped roughly- 1/4th cup. fresh berries, chopped- 1/2 tbsp. Salt - a pinch Brown Sugar – ½ tbsp. Soft unsalted butter - 01 tablespoon. For the garnish: Berries, fresh- 04 nos. Method: Take about 1/4 cup of the cold coconut milk in a small glass bowl. Whisk in the corn-starch, ensuring that there are no lumps. Transfer to a heavy- bottomed saucepan; add in the rest of the coconut milk. Add the coconut cream, sugar, salt and melted dark chocolate. Whisk well to combine. Heat on low flame cook for 02 minutes or until the mixture is slightly thick. Add chopped berries. Take off from the flame. Immediately whisk in the roughly chopped dark chocolate and butter so they melt and combine completely. Pour the mixture into small dessert glasses / bowls / coconut shells. Dark Chocolate, Coconut and Berries (Of Your Choice) Pudding (Eggless and No-Bake)
Indulge in this rich, delicious and relatively healthy dark chocolate pudding with the goodness of Coconut Milk, Coconut Cream and berries of your choice: Cherries, blueberries, strawberries etc.

Preparation Time: 10 minutes | Cooking Time: 02 minutes | Refrigeration Time: 02 Hours (Serves: 04)

Ingredients and Quantity: Coconut milk (cold) – 01 cup. Corn-starch/Cornflour – 01 tbsp. Coconut Cream -90 ml Dark Chocolate, melted- 1/4th cup Dark Chocolate, chopped roughly- 1/4th cup. fresh berries, chopped- 1/2 tbsp. Salt – a pinch Brown Sugar – ½ tbsp. Soft unsalted butter – 01 tablespoon. For the garnish: Berries, fresh- 04 nos.

Method: Take about 1/4 cup of the cold coconut milk in a small glass bowl. Whisk in the corn-starch, ensuring that there are no lumps. Transfer to a heavy- bottomed saucepan; add in the rest of the coconut milk. Add the coconut cream, sugar, salt and melted dark chocolate. Whisk well to combine.

Heat on low flame cook for 02 minutes or until the mixture is slightly thick. Add chopped berries. Take off from the flame. Immediately whisk in the roughly chopped dark chocolate and butter so they melt and combine completely.
Pour the mixture into small dessert glasses / bowls / coconut shells. Refrigerate for at least 02 hours. Serve chilled garnished with fresh berries.
